I have picked up quart containers in fish markets for a few bucks, $3 I think. It's alot more than and cheaper than the Old Bay you will find in a supermarket where I am at. I pick it up in MA when I crab.

I order my J.O. #1 directly from the J.O. Spice Company. I order it in the 32 oz. plastic bottle.

Tip: Save money and buy J.O. #1 (J.O. #2 is the same seasoning with coarse salt added -- why pay a premium for salt when you can mix in your own!)  Grin

Hey Crabguy, now you got my attention. Smiley What kind of sauce, marinara. If so did they cook the crabs in it, that's the only way. Some places just throw the crabs in the sauce after they are cooked. It's not  :(the same.

Looks inviting but I tell you Crabguy, there is no better marinara sauce over pasta then home cooked Italian style with fresh crabs. The flavor they add to a good sauce is nothing less than fantastic Enjoy Wink Wink Wink

(I ORDERED THE WRONG ONE, OOPS)

A LITTLE STRONG AND A LITTLE TOO MUCH LIKE COCKTAIL SAUCE

I DONT THINK IT'S JO  SAUCE ITS

I hope the steaming directions are  right on the JO seasoning, LOL, seems Old Bay had a problem with that, unless they corrected it!

CW wife comes from south phila and her moma taught her how to make red crab gravy  ::)they don,t call it sauce in south phila now you want to talk something goodo the crabs get cooked in it from the very begging i don,t like the crabs but the flavor it gives the sauce and spagetti make you want to lick you plate Tongue

try the jo soup  mix  made 2   quarts just add tomato sauce and diced tomatos and a pound of  crab meat really good suff

I called the J.O. Spice Company directly and asked about this. The nice lady told me that JO#1 is identical to JO#2 without the salt. I asked her several times just to make sure and she assured me that they were the same.

Make sure that you use coarse Kosher salt (not rock salt or table salt).

I finally ordered some JO #2 seasoning to compare with the JO #1 seasoning that I usually use.

From a flavor standpoint, both seasonings taste identical. They even look identical, except the #2 has flakes of salt mixed within.

I managed to pick some of the salt out of the #2 seasoning and noticed that it's FLAKE salt and not at all like the coarse Kosher salt that I usually use. Coarse Kosher salt is similar to "Margarita salt". I'm sure you know what I'm talking about. Flake salt is wide and very thin... and translucent. You can see right through the flake, whereas with the Kosher salt it's white.

So, that would explain why your homemade mix of JO #1 and coarse Kosher salt has the wrong texture.

I just ordered a 5 lb. bag of flake salt from the JO Spice company and I'll post a picture of it side-by-side with the Kosher salt.

I just picked up 50 lb. JO#1 seasoning, wholesale and paid $40.38 for it, The #1 has less salt. As stated in an ealier post, this allows you to add salt to your liking! I actually add ground mustard and white pepper as well

I was right about the flake salt!  Cheesy

Got my 5 lb. bag of "J.O. Coarse Salt" and the salt flakes are about twice the size (in diameter) as regular coarse Kosher salt. I'll post a picture soon.

Here's a comparison of various salts.

Left, is J.O. coarse salt, then Morton coarse Kosher salt, then regular table salt. The Morton coarse Kosher salt is the biggest flaked salt that I can find in the supermarket. It's amazing how much bigger the flakes of JO coarse salt are!  Shocked

Jack, this probably explains the "texture difference" that you experienced when you added salt to JO #1 seasoning. Unless you use JO's coarse salt, the texture will be off.
