If you cb4c, they don't take long at all to cook.  How long did you cook on each side?  Pull the apron off, scrape off the lungs, cut the face off .  I eat the guts though, but cb4c is ok also.  I don't thing you forgot anything, sounds like it was over cooked.
what is cb4c

CLEAN BEFORE COOK

taking the guts out of the inside and the top shell, leaving an empty carpice without the guts.
I did take the guts out before cooking; I didn't wash him .
but maybe I did just over cook him
thanks jeff

Doesnt take real long to fry them on each side. We use peanut oil because of the lower burn factor. But canaloa works good. Dont fry but about 3-4min per side until just goldeb brown.
