Do any of you guys have a really good reipe for stuffed tomatoes with crab meat??? I was  watching Iron Chef and missed exactly what was in it. The don't have the recipes for Iron Chef on the FoodNetwok thing becuase most of them are signature or one time deals. But any help or info would be grat for my garden fresh tomatoes. Grin (ready within three weeks for romas)

Try this.......TOMATOES STUFFED WITH CRAB MEAT   

1 lb. crab meat
1 tsp. salt
3 tbsp. butter or other fat, melted
1/4 c. grated cheese
6 lg. tomatoes
Dash of pepper
1/4 c. parsley, chopped
1 tbsp. lemon juice
1/4 c. dry bread crumbs

Remove any shell or cartilage from crab meat. Wash tomatoes. Remove stem ends and centers; sprinkle tomatoes with salt and pepper. Combine butter, parsley, lemon juice and crab meat. Place in tomatoes. Combine cheese and crumbs; sprinkle over top of tomatoes. Place in a well-greased baking dish. Bake in a moderate oven, 350 degrees for 20 to 25 minutes or until tomatoes are tender. Serves 6.

ANOTHER

FRESH STUFFED TOMATO   

6 l g. tomatoes
2 lbs. crab meat salad
1/2 head lettuce

Wash tomato and lettuce, break up lettuce and arrange on platter. Remove pulp from tomato (save for any recipe needing tomato puree). Stuff each tomato with generous amount of crab meat salad. Put on bed of lettuce. Serve cold.

Mutzy sounds good and will try it as soon as these "toms" get ripe in three weeks. BUT I do have one question, you say grated cheese. What type Huh  I assume Parmesan as this is what I use in other recipes.

I can make those any time so it gets old. Just looking to do something new and different with both the crab meat and tomatoes . I like to play around in the kitchen and come up with some good stuff. I'll be a chef in my next life Grin
