First the good news, even with the night temps down again in the 30's the creek is 55 today! Still no crabs yet but 2 channel cats came to visit and staying for supper.  I am going to put them in the smoker this afternoon. Covered with cajun pepper seasoning.  Guess I better get the rest of the boat finished. Looks like we will start crabbing in a couple days if the water keeps going up. Pots are ready and waiting..

Where do you get your pots that are legal for VA? I saw a lot of Pots in the Potomac the other day and would like to drop a couple the next time I go out fishing. Thanks a lot. blue

Two best ways......deep fried with seasoned breader or broiled in oven with lemon pepper and butter.

keep in mind not all catfish are the same. Channel cats and blue cats in rivers are good fare. Mud cats or bullheads are not. depends on the species and the water quality etc. plus you got to skin em then cut off the filets. usually nail there head to a tree or board and then cut around the head and using pliers skin em out. A lot of work to me. I just like to filet a fish.... and better yet, just order it in a restuarant or buy a pack of catfish filets in the grocery store..... the are usually next to the Tilapia...

i gut them, leave head on, leave skin on then coat them with cajun stuff.. its a mix of dry seasonings.. then in the smoker they go for 2 hour at 200. we eat them cold as a snack... just pick the meat from the bones. dont eat the skin cause the cajun stuff is so HOT
