Nice Kev...

Told the wife about cooking them in pickle juice and she told me don't even think about it.. She said Yuengling beer and JO is just fine with her.  Did make another two gallons of pickles last night.  one bread and butter and one dill with extra garlic and dill and a coupl of hot peppers for some zing.... Shocked Shocked Shocked
Not sure if a pickle grilled chickne breast would be good or not.. of course... chik fila puts pickles on therir sandwiches... I like pickles, but not sure if I like em that much....   laugh laugh

Well here is another thing that I have done that worked out really well. I crusted the chicken pieces in rock salt and left it refrigerated for 30 Minutes. Afterwards you wash the salt off, dry the chicken and place on the grill.

Pay attention to the internal temperature of the chicken as the salt does the same as the pickle juice and starts the cooking process.  My first few time I found that the internal temperature desired was a lot lower when doing chicken this way but it is well cooked chicken. What I have found is that the salt in the pickle juice and the rock salt actually start the cooking process from the outside of the meat thus sealing in the juices. You will find that it provides a much more juicy piece of meat.

Next chance you get do a piece with rocksalt(kosher salt works just as well) and another in pickle juice to give it a try.Just remember that 20 to 30 minutes is all you want to marinate and then wash off.


I grew up in SC and the vinegar taste is in my blood so I tend to gravitate toward food with that taste.

I started CBC on the last couple of bushels I caught.  I'll make a layer in the steamer, add a sprinkling of Old Bay, next layer, Old Bay, etc.  Not too much mind you, but some seasoning in every crab.  That way every crab has Old Bay right on the meat as it steams.  So far they've gotten great reviews from everyone I've shared with.

I used to just steam the crabs live, but CBC is my new favorite.  Every crab comes out of the pot ready to eat, or give to neighbors, or pick.  Plus it allows the seasoning to get right on the meat.

Just one question though- what do you guys do with the shells & guts when you CBC?  If you let that stuff sit in your garbage can for one or two days the smell is pure evil.  Don't have room for 2 bushels of guts in my freezer.  Thinking about steaming the guts just to knock down the smell.  What do you do?

As I'm cleaning 'em, I scrape the lungs & guts into a 5 gal. bucket along with the shells. I have access to a dumpster, where I take the bucket and dump the contents into a trash bag, then toss it into the dumpster. End of problem.  Wink

Here in Staten Is. N.Y. I keep the shells and stuff in the frig.We get a garbage pick up twice a week.Just put it out the night before,or like Bruce said bring it to a dumpster at a supermarket

I cover them up with grass clippings it helps to cut down on the smell. . it 's not bad at all.
