First, Welcome to the BCA.. Second, I am going to move your topic to soft crab know-how. This might be a good place to start, if you have not read it yet.... http://www.bluecrab.info/crabbing/softcrabs.html

I would start with one tank and practice before you spend a lot of money. Also its worth to read all the info and post on this site. Remember for even a hobby its a 24/7 job.

Just curious, what kind of crabs do you even catch in New Zealand? Is there local demand for your local soft shells?

Their crabs are small. That is exactly what I was thinking. That is why I asked if there was even a crab market in the area. Real small soft shells might go over big though if you could legally get them in quantities. I could imagine small ones served like wings, onion rings, french fries or fried shrimp or clams in big baskets fried up and tasting good.

Battered and deep fried. Served in a basket, a dozen or so at a time.

First lease a store front and get a big sign out front that says "GET YOUR SOFT SHELL CARBS HERE" ON BREAD! The only problem you might have is with the Atkins dieters. LOL

I thought I read on here before that Australia has the "Blue Swimmer" crab that is similar but longer and more slender. If it also sheds the shell (Which I would think it must) than a soft crab is a soft crab!
