So I have these nice jimmys in the freezer and I want them for Christmas Eve Dinner.....do I have to thaw them before I steam them? Do I just steam them frozen?
Help!!!!

Make sure you thaw them cold...don't leave on counter or run hot water. The bacteria wont grow if you thaw them at a cold temperature. I know my mom doesn't know that...

Your right Russ it does get mushy...I think the best thing you can do is to defrost them first then make a sauce...Even after there frozen they still make a great sauce..I tried to bake them after I froze them but they still came mushy

My crabs aren't mushy  I won't refute what others are saying though. I bring my steam up to the sae level as if I had just caught them. I layer them the same and steam my precooked crabs for ten minutes. They come out great  I don't know if you guys are precooking them or not

Yes, I would say they are precooking..it's mushy crab meat...good only in recipes. The only suggestion I have for precooked, frozen crabs is this: Defrost and try to get every drop of water out of them...give them a shake every once in a while, try to get every drop of water out from the inside of the crab...the more water, the more mush. Then steam and hope for the best  Janice

I tried freezing some crabs a few years back. I cleaned them all; took off the carapace and flushed out the guts. Shook off as much water as I could. Then precooked 1/2 of them. A fast steam for maybe five minutes for half of them; the other batch were raw. Then froze both batches in vacume freezer bags. Both groups taste the same. I threw them all out! I don't know what happened but the bags stunk inside and they were frozen only about four mnths. Have not tried it again!

Kristie, I have not done my cleaned alive and frozen crabs yet but I am going to cook them frozen. When I cook frozen shrimp I cook them frozen when they float to the top they are done and they come out perfect. I have a chef friend that made the best calamari I ever tasted. I asked him ho he kept so firm and tender. He said he cooks them frozen. That is how I am doing my crabs. The Verdict.......pulled them out of the freezer, half thawed them and then steamed them till the legs and claws were orange then turned off the heat and let the cover on the pot for a couple more minutes.....they actually were pretty good. You could tell they werent fresh caught but they werent too mushy. I have more in the freezer for new years eve....cant wait.  Thank for all the advice!
