Caught a bunch off spanish makeral last week and I am looking for ideas on how to cook them.  I have heard they are very good eating..... Similiar to wahoo.. which I like very much..... The capt I fished with suggested lemon and buter with some seasoning like old bay baked 12 minutes at 350......  My brother recommended lemon butter on the grill with Old Bay or Chef Prudhomme Seafood Magic........ Which I do the same to my Rockfish and Mahi Mahi...I know you can smoke them also.. just looking for something besides lemon butter and seasoning..... I would prefer to grill them versus bake them.... but up for suggestions caught two limits = 20 spanish up to 3 lbs or so each..... so got a lot of fish filets to work with..

thanks for any good ideas.. yeah I know the Chef Dog is asking for cooking help....  hey we all need a little help once in a while..... Grin

I would divide them in half,cut one half up in bite sized chunks,skin on,fillet the other half n cutin to finger width strips,take both halves and go back fishing to see if you can catch something fit to eat.  Roll Eyes Grin

smoke what you can eat, make some pickled herring if they came from clean water

use the rest for fish bait, crab bait and chum

we used to catch them 4 at a time and fill up trash cans with them in the old days  Wink Grin Grin laugh

a little too fishey and boney for me  laugh laugh

man, one time I must have smoked 100 pounds of mackeral or so it seemed. Everbody that came to the house, left with some smoked mackeral, whether they wanted it or not  laugh laugh laugh laugh laugh

how much smoked fish can you eat laugh laugh

you can freeze smoked fish  Wink Grin

do a search for more recipes, I threw my recipe away years ago and prefer to buy herring

I remember using onions etc. and not cooking the fish but keeping it in the refrig... It is not as good as herring IMHO

I used the term "pickled herring" because folks are familiar with that concept  Wink ,, if I said pickled mackerel, I thought people would think of cucumber pickles  laugh laugh laugh

I think everybody got the sarcasm and just let it pass as they recognized it as a concept and not an absolute term  Wink Grin laugh

thanks Weed.. I heard they were good like king or wahoo.. a bit fishy but firm meat unlike blue fish.... which I think is mushy.....  they are all fileted skin on one side and vacuum sealed and in the freezer .. so that is fresh as it going to get other than right out ofthe water that day.........  guess I will try grilling with a smoke box on my grill in lemon butter and old bay to start.... I have also heard that spreading a season mayo ( aolie... ) with old bay in it.. and sliced onions on topped and even sliced tomatoes too baked in the oven is very good on blue fish so should be even better on makeral.... maybe topped with a littel shredded cheeese melted on top.... oh well  .. keep em coming and thanks for all the ideas of using it for bait .... for other fish and crabs.....

correct RD,  they were actually very good.  reminded me of a meaty flounder.....

I took a whole lemon and squeezed it out, removed seeds, melted 4 tablespoons of butter and then mixed the two ingredients...... then got my grill nice and hot, added applewood to my smoke pan and let it get some smoke going.....layed tin foil on grill.. brushed the foil with lemon butter,  layed filets skin side down.. brushed filets with more lemon butter on top and sprinkled liberally with Old Bay on half and I did Chef Prudhomme 'seafood Magic" on the other half....
cooked til they flaked...... serves with some sauteed squash ( yellow and zuc's  and some red onion slicedd in zesty italian dressing ) and a liittle rice.... and then when the fish was almost finished grilled up two shrimp kabobs  the same lemon butter and old bay....... laid the shrimp on the rice with a side of squash and a couple SM filets...... it was very good......  like I said it was like a meaty flounder filet.... had a very mild flavor......
so next time you out fishing and can catch some I recommend them as very good table fare..... Cheesy
