I always assumed the vinegar was added more so to combat the smell as it was to add to the flavor when steaming. Am I wrong?
Apparantly some people can find the smell overpowering, especially if done indoors.

whooo boy i guess i asked for that one!
On another side note, hopefully to steer away from my stupidity, when in Louisiana I ate what they called 'spiders'...essentially shrimp shells that were deep fried if I remember correctly. It really wasn't half bad.

as for shrimp shells - I guess they can batter dip anything and it tastes good
they do have deep fried shrimp heads - yummy

Maryland way, Pa way, vinegar, beer, water? Too many decisions!
The CT way.... Get pot with fire under it. Put some water in pot.
Throw crabs in pot with JO#1 and get beer. Drink beer and think of crabs cooking.
Get another beer. When that beer is done so are the crabs.
Get another beer and plate. Dish out crabs. Done!
The vinegar added to the pot wasn't to cut the smell; it was used to begin to break down the crab shells and cartilage for easier eating...and taste. Vinegar is an acid, crab shells are calcium chloride; a base.

I agree I tried all that follow what dad and grandad did but it really doesnt do anything go to any crab house and see if there putting beer or vinegar in there pots bet not, I no not and only put a little seasoning on when you steam and when you take them back out put a little more on your people your feeding will love you and your saving a lot of seasoning that would be in the bottom of your pot. steam your crabs with water and drink your beer........
