freezing.
tugcapt, or anyone else, do you feel like freezing effects the taste? Short term freeze ok? long term freeze bad?
I freeze lots of them in may and june during the first peeler run for winter (and all season long). At Xmas I give dozens frozen over the season to family as gifts. Nobodys ever complained. When vac packed I don't see any difference between fresh frozen and months old. |

I don't vacuum mine and I leave the top shell on, just wrap them tight with plastic wrap. I tried to spray a coat of salt brine on one last year and it still came out the same. I think maybe if I let it freeze a little, then spray the seasalt mist on them, then wrap, it might be a little better. Fresh is best, but I still like them frozen.
On a side note: When my kids were young, they wouldn't eat whole soft crabs, so I would give them just the claws and they loved them. Those big boys would make good "just claw" sandwiches, and the clean, legless bodies on another. Too bad the claws aren't sold separate, but I bet they would be expensive.

If you want to glaze your crabs you need to freeze them first and have your water at almost freezing.we dip in slush water in the freezer to get a good glaze.

I will try freezing them first. I kind of figured I was doing something wrong when the spray just ran to the bottom of the wrap. My brother freezes his St John's brown shrimp that way. I wish I had more time to drive up to St. Marks and buy some crabs from you. (I am in Orlando til tomorrow on business) Maybe next trip down here. |

Yeah buddy. Nothing like a fried soft crab. Went crabbing today. Didn't do that well but put 33 busters in the tank. Some big ones. Have to rig up my garden hose on the top of my shed to warm the water up so the crabs can shead. Right now the water in the tanks are real cold. .......To cold for the crabs. Let ya'll know how it turns out.
