brined..marinated in red wine...rolled in flour( which fell off in the pan).pan seared with evoo,butter,mushrooms,thyme(crabdog),lemon( my choice),soy-sauce( chriss)...and finished off deglazing with red wine...cooked to pink in middle and finished off with wild rice......[dang] it was good...had a nice tangy zip to it and was delicious...dog didnt get too many pieces..lol... thanks again for the input.
