That's a pretty amazing recipe in my opinion!  Then again I'm easy to please and the sun dial was pretty amazing to some folks at one time.

interesting concept ----

can one put a Secret Recipe on the internet which is viewable by six billion people around the planet and still call it a secret

and the recipe is just one ingredient in the total enjoyment of the event

I won't go into all the things that go into a Great Time. But suffice it to say that some of the best times that I have had in my life involved less than awesome recipes.

also depends on the palettes and personal tastes and health concerns of your guests.

what is awesome to you, could be hated by your guests for a variety of reasons

just a few thoughts

Sometimes cooks around here use Sheepshead instead of crabmeat in their dishes.  Almost can't tell the difference.

OK, let me stir this a little and maybe put a spin on it that's been missed. I took the initial read on this someone looking at this from a naive state, but not inexperienced. And I think the problem here is that the majority of crabs that are eaten, except for what we can freeze for the winter, is eaten in a similar way. Put crabs in the basket covering each layer with a generous dousing of spice. Steam 27 minutes. Enter heaven. I know in other areas a crab boil is more popular. A similar cooking process  happens except the crabs are held in the water, as opposed to having the steam flowing as a vapor surrounding the crab. A boil will generally have other items such as corn, sausage, onions, and potatoes in the water with the crabs. These items might also be served with steamed crabs, but not necessarily cooked directly with them.

Getting back to the crab, whether it's boiled or steamed for our discussion, it comes down to the spice(s) that is used. In steaming it is generally a blend of dried spices, garlic and salt, as an option for some people. In boiling a dried spice blend can also be used, but liquid boil solutions can be used. Now if someone has created their own spice blend and can make it cheaper than can be bought. So be it. I know people in this area who can go through 50# of spice in a season as a rec, and would care less about mixing their own spice and just buy a 50# box of JO spice or whatever.

What I'm trying to get to is that I don't think you'll find that many different recipes for steaming crabs, or boiling crabs. And the majority of people on this board fall into the former category. Notwithstanding, there are many fine recipes in the recipe section. But as I've said before, just because somebody took the time to write down a recipe doesn't mean it's good. Take time to read the recipe and make a decision for yourself if it's what you're looking for.

OK that's my take. Good luck with the search.

Once again thanks Max for actually answering my post.  I'm not trying to get flounderpounder and ronster all riled up.  I am a good cook, but I've never worked with blue crabs.  I'm from New England...I've worked with lobsters.  If I'm going to New Orleans I'm not just going to whip up a Gumbo...I'm going to ask the locals for their grandma's secret recipe (that's all I was looking for here).  Also is there any way for me to block flounder pounder and ronster from my post?  I'm just trying to get some answers and they decided not to read the original post and hijack the post.  Thanks

what is a great crab recipe is like asking what is a great beer

Four presidents of the big beer companies meet for a drink.
The president of Budweiser orders a Bud.
Miller's president orders a Millers
and the president of Coors orders a Coors.

When it is Guinness turn to order he orders an iced tea.

Why didn't you order a Guinness everyone asks?     Nah Guinness replies. If you guys aren't drinking a beer neither will I.

Cool lots of good stuff guys.  I didn't contradict myself with the crabs...I said i never worked with blue crab.  I lived in Seattle for a couple years and crabbed the last year...I worked with dungeness and redrock crabs.  They're bigger than blues (especially the dungeness).  Truth is I haven't worked with crabs that much though (usually just steamed or grilled them).   That risotto looks really good and thanks for the crab cake recipe etc too.   I appreciate it guys

Best blue crab I ever had was fresh(delivered by fed ex), some steamed & some boiled, done at home with family following these guys' great advise.  Most great food is made great by the company you have, not necessarily the ingrident.

I know that the crab forum has some recipes posted but I'm wondering if anyone has any amazing crab recipes.  I need an awesome recipe to steam the crabs of course (any beer steaming recipes would be awesome), but does anyone have any other recipes that are truly amazing?  I'm a serious foodie and a really good cook so please don't put any run-of-the-mill recipes on this post.  I'm talking about serious crab bisque recipes from scratch (with a homemade stock).  I'm going to the OBX in August and am bringing down a lot of fresh ingredients from my parents' garden (every kind of herb imaginable) so cost of the recipe is not an issue.  Thanks so much,
Luke
PS. I've been (and still currently am) teaching English in polluted as [Sam Hill] Saigon.  I haven't eaten anything for seafood except catfish, carp and farmed shrimp for the last 2 years.  I'm going crazy for some fresh good crab and fish (that isn't bottom feeding garbage) and I only have a week of vacation before I have to go back to work so I STRESS again....ONLY BLOW YOUR MIND RECIPES.  I'm quite good at cooking fish, but if anyone has a 'to die for' fish recipe I would love that too (but just email me, I don't think I'm supposed to talk about fish on this forum).

Use the force Luke, it's the only way

I would watch how much basa you eat. Some time ago a  friend showed me an article in her Veteran's  magazine on that fish. Apparently it is raised in the fields where Agent Orange was dropped. You may know this,  but just wanted to make you aware of this.

i think some of us are a little puzzled by your posts, in reply 10 you said "i'm a good cook and can cook crabs just fine". in reply 14 you say " i can steam a crab. i can grill a crab". in reply 21 you say " i am a good cook, but I've never worked with blue crabs". Huh the last post contradicts the previous two, so, do you know how to cook crab? inquiring minds want to know. Grin as far as hijacking posts, get used to it, it's not only a common occurrence around here,it's expected. lighten up some, you need a thick skin to hang out here! Wink
