Got a bushel on Thursday afternoon from a fellow crabber.  Had a neighbor who was willing to clean them alive.  Boiled about a dozen Thursday night and they were excellent.  The rest of the bushel sat overnight, uncooked, in the very cold (beer) fridge.  When I boiled them on Friday, they were all mushy.  Am I correct in guessing that when cleaning crabs alive, they need to be steamed right away?  Have always cooked 'em alive then cleaned them.

You've got it correct.  Either keep them alive & cool, like in a fridge or cooler with fresh air available, or cook them all right away.

When I boiled them on Friday, they were all mushy. 

Did you steam them or boil them?

You've got it correct.  Either keep them alive & cool, like in a fridge or cooler with fresh air available, or cook them all right away.

There have been several times, including this weekend, that I have cooked them over a two day period with no mush at all. Just my experience.

I'm not sure why you think boiling crabs makes them mushy.  I've been eating boiled crabs for over fifty years and NEVER had a mushy crab.

Did you steam them or boil them?

I have always boiled rather than steamed when I cook them alive.  Do I need to steam them if I clean them alive?

I've boiled them cleaned and uncleaned and never had them mushy.  Maybe to long of a boil??

It shouldn't make a difference.   Perhaps you over cooked them?

See that's the way I feel about steaming them.  I think they are sweeter if you boil them....but then again I eat the mustard to.

I had boiled crabs, in Jersey once........once!

They were terrible!!!

Gave me a cup of vinegar and a pile of oldbay to dip my bland crab meat in. Tongue
