I prefer to clean them alive and then boil them in Old Bay.

Thanks for the info, guys.  From now on, I'll steam them, or maybe boil them, and I'll eat the mustard, or not, and I'll clean them alive, or after cooking them, and I'll cook them the next day, or right away.

Thank goodness you've cleared up the confusion.  A wise man once said, "The absence of alternatives clears the mind marvelously".   Huh

             Yes, they did.  That last post was meant to be humor.  Having been a boiler all my life, I'm going to forget about cleaning them live (never liked the idea), and try steaming.  Pretty sure I shouldn't have cleaned them live and then waited until the next day to cook them.  Seems like I'm just cooking a dead crab at that point.

My experience has been that an unspoiled but mushy crab is caused from too cold storage temp. JMO

I questioned my neighbor about this as she owns KENT ISLAND CRAB COMPANY in Pasadena,Md. She informed me that the reason a crab is mushy is because it was dead when steamed and the texture of the meat had broken down.Even if it was refrigerated and its still safe to eat the meat starts to degrade.While this is okay if you are aging beef or such , its no good for crabs. Thats why crab retailers always go through them before they steam them to make sure they are alive.Thats also why I always steam them as soon as I get them and then store in the fridge.Better to eat a firm cold steamed crab than a hot mushy one.And they will last for a week this way in the fridge once steamed.
