There was a bit of a discussion in the transport and storage forum about steaming vs. boiling crabs.

Please vote in the poll and give your reasons for how you prefer to prepare them.

I just prefer steaming.  It doesn't wash away the seasoning and the product is less watery IMHO.

I have had times where I had no rack to steam my crabs. The crabs on the bottom served as the rack and thus were boiled. I find them bitter and mushy. I use 1/3 vinegar, beer and water. Steamed crabs are much better IMO.

STEAMED !  My parents would turn over in their graves if I served them boiled. By the way, the ONLY thing I don't like about visiting Louisiana is the barbaric boiling of crabs.
No offense.  Can I feel as strongly about politics and religion ? Hmmm.

Well I am new to the crabbing scene, but I prefere mine steamed. I havent tried any fancy recipies yet, but I use an old turkey fryer, with 4 scotch glasses and a plate as a rack then add water, bout 2 inches in the bottom. then start stacking crabs and every dozen I cover with Low sodium OB.

I think next time I will try 1/3 water/vinigar(I bought white house apple cider)/ beer. And what ever crab seasoning I have on hand.

I would suggest you use beer or vinegar but not both.. and aple cider vinegar can make the crabs kinda bity instead of sweet.....  I use 2 beers (yeungling) rack is 4 inches high.... and JO #2 season each layer of about 6 crabs and I leave about 6 inches open from top allows steam to rol around .. when I have filled my pot to the top the top ones get done and hte ones in the middle are still half blue..... my pot will do about a half bushel  30 crabs or so....get th epot up to a quick boil th en dwon til it just wisps steam out of the top...... then about 20 minutes or so..... and done.... I also add corn in th epot half husked ( take of th estalk and the heavier outer husky down to the light color husk ) and then layer about 4 ears alternating do about a dozen little sprinkle of JO #2 on them too... nothing like crab corn.. I do my corn seperate at the end as when I have done that on top the crabs the crabs in the middle don't get fully cooked..... guess I need a bigger pot....
