Both ways with a small amount of crabs, 25 or less I clean them, Jo and steam.
More than that takes me to long and I just steam them up with JO spice. Always delicious and cooking with the mustard adds its own flavor.
As far as Flavor the cleaned crabs get so much more spice in the meat they just taste better.
If you like crabs and spagati sauce, or garlic and butter crabs you have just got to try cleanning them first!
Just one more plus for cleanning them first I think the meat pulls out with the legs a little more often.
Now I did grow up in NJ and learned to prepare these dishes from an old Italian woman she was a great cook.

It must be a non MD thing to clean before.... Never heard of this way of steaming crabs till work took me out of state.... NJ,PA,DE..... Guess I might try them that way but to me it is Just not right.... By the way ... what is JO seasoning?  ? I know old bay and bookbinders.... Never heard of a JO....

JO is the BEST seasoning on the entire earth. Its made strictly for crab but i cheat and brush my teeth with it :laugh:Go online and order some JO#2 ASAP. You will toss the old bay cr#%.
