Doug,
I was just in the Ft. Walton/Destin area and crabbing for blue crab is definitely something to do down there.  Locally in the seafood market the crab was going for $3.50/lb.  We saw them on the beach right out from our condo everyday.  In Choctawhatchee Bay, from shore right by the bridge into Destin we (my 3 year old son nd I) caught 9 crab using string and a dip net, and one 2 ring trap in just over an hour.  So the crab are there.

Plenty of bluecrabs to go around.  I live in Ft. Walton and my friends and I go along the straightaway between Ft. Walton and Destin on highway 98.  We go out and night in 2 to 3 ft. of water with nets and flash lights, and within 2 hours can catch about 100 blue crabs.  Currently deployed right now but am buying a bayliner 175 when I get back, I will attempt to use crab traps and see how that works.
