 I work at a very popular Baltimore crab house/restaurant that has a little trick that none of our customers know about....they pre-steam the crabs. We usually get a few bushels in each day.  They're sorted, and then immediately steamed.  Sometimes those crab that are steamed sit for a day before they're actually sold cuz we steam so many crabs at once. Funny thing is a lot of our customers rave about how good our crabs taste!  Little do they know the crabs they're eating were steamed yesterday, sat in a cooler for 24 hours and then were flash re-steamed for their enjoyment. Grin They're simply seasoned with JO, but besides that, I believe maybe the crabs sitting in their own juices actually enhances their flavor as I too agree that they are delicious!  If the customers actually knew they were re-steamed I'm sure they would be appalled but what you don't know can't hurt you!  If only people REALLY knew what goes on behind the scenes where they eat!  Wink Grin        ....And on a side note, don't be an a$$ when you go out to eat because what goes around comes around.  It's truly amazing how some people act when they go out to eat. Lips Sealed There are a lot of unkind words I can use but really it's just embarassing sometimes. Wink

I'm sure the same thing happens here with the Crayfish , but hey  "If it looks good ...........eat it." I don't think us Americans have the patience to wait 30 minutes for our restaurant food to come out. I know some folks that get all upset when they see an insect in a restaurant and won't go back any more. I say hey you never have bugs at your house ?

Most of 'em have been doing it that way for years, they just don't advertise it. A friend of mine owns a crab house and buys all of his crabs on Mon and Tues.

The same thing is done for banquets and weddings with steaks chicken etc,it's no biggie,it's just reheating food,it s done at high temp for short time

yeah im pretty sure you didnt uncover the holy grail of crab houses...i've been eatin cold crabs for 30 years  that sit in their own juice for days...sometimes a week..lots of places I know do that...

I just dont reheat....I prefer them cold

FP i reheat by dipping the cold crabmeat in steaming hot butter as i pick.

yeah I kinda like cold crabs better... I either like fresh out of the pot steaming or cold a day or two later.....   heard of people re heating them in a microwave.. didn't know if anyone has tried that or knows how to do it.. my luck I would explode them inside the microwave.... laugh laugh

To reheat in the microwave, just cover a few at a time with a wet papertowel and zap em for about a minute or two.
