Does anyone have pics of a live steam set up?  Or any advice on making one?

Visit Schnaitmans on the Wye. Your run a Pressurize Steam Jenny and direct the steam into your steaming kettle. You must control the pressure with a relief value or Kabooooooooooom!

Depending on the pressure you run the hotter the steam will be. Of course unless it is a closed system you will need a water make up valve and enough heat to turn the new water to steam in a heartbeat.

On an open system with an atmospheric pressure of sea level the steam will be 212 F and that is it no matter how much heat or how large the burner.

Will cook dry quickly. Be careful.

I found this out the hard way. Bought a Bayou double jet burner, placed my keg on top with water and vinegar mix, cranked the regulator up all the way. Pot started steaming in no time, added crabs and JO then got side tracked doing something. Came back when the crabs should have been ready to find smoke rolling out of the pot. Didn't burn through the keg but had a heck of a mess to clean up and a new meaning to Blackend Crabs.
Now I crank it up until it steams then turn it back down .
