Are blue crabs soft or hard shelled? Sorry, never been crabbing a day in my life and today is my first trip

Generally they have a hard shell. Occasionally the have soft shells when shedding in order to grow.

And I've heard of people eating spider crabs but are the ones in jersey edible?
