Looking for Crab Wing recipe
«

Hi all,
About ten years ago or so I was on my way home from Timonium MD. to Delaware and I am not sure if we were on Rt 1 or Rt 40 and we stopped bye a little bar/restaurant and they had the best Crab Wings that I have ever found. They were not completely deep fried and they might have been steamed because they did not have a whole lot of color. But man they tasted great. Was wondering if anyone might have had these before or if there was a good recipe out there for a good crab spiced wing. Like using J.O. #1 on them or something like that.
Thanks,
Ron

Well, I guess I could not wait. Had some wings ready to go so this is what I did.
I put the thawed wings in a little water with some J.O.#2 and J.O.#1 to marinate for about two hours.
After two hours I drained the wings reel good and coated them lightly by shaking in a bag with a mixture of 70 percent House Autry Seafood Breader and 30 percent J.O.#1. Then deep fried for roughly 4 minutes and this is what I ended up with. (see pic) It was a little salty so next time I will use less J.O.#2 and more J.O.#1 in the marinade to cut down on the salt. But man they were very moist and juicy and had that good old crab spice flavor.

steamed wings are great but a little messy to eat. take a coule pounds of wings and put them in a small steamer. use 50/50 water and vinegar in bottom sprikle wing with old bay or jo #1 and steam till the almost fall off the bone - about 20 min after the start steaming.

I wouldn't mix the J.O. #1 and #2 together. I would leave out the J.O. #2 altogether and just use the #1 or if you like #2 then leave out the #1 but to be honest there is no benefit to mixing the two together. If you are trying to give it heat then go with the J.O. X-Hot. However, customers have been telling me for years how they use J.O. #2 on their wings. They tell me to defrost the wings, run the #2 all over them and let marinade over night and then grill. I did this with the J.O. Garlic Crab to see how that would go over and there wasn't a wing left at my bbq.

JO 50% less salt would work with a melted butter and vinegar based hot sauce (Tabasco, Franks, Crystal, Petes etc). lightly flour wing parts and fry. coat with wing sauce while hot. I think JO 2 would def be a lil salty

May have to try this one.. I love to either bake my wings or grill them using a littel smoke chips along with them or place them on my smoker.. as I am not a huge deep fried wing person.. think baking or grilling is a little better for you....
not that hot wings are health food or anything....

I deep fry them first. When the sauce is applied in a tupperware container and shaken, I also sprinkle on the crab spice of choice.
I've tried adding it to the breading when I coat before frying but the flavor wasn't there. Add it right at the end & it tastes great.

Have not been on the board for a while, Thanks for the info. Jospiceginger, The only reason that I mixed the #1 and #2 is I like the salt content of the #2 but it would be too salty with all #2. Your spices are the best out there in my book. I have tried the garlic so far just on crabs but I am going to get some more and try it on other items.
