I thought this was pretty cool. It's a deep fried hardshell crab. A low country specialty. I was also able to pick up som JO#2 while I was there.

Used to get them when I was a kid at The Franklintown Inn in Woodlawn, MD. It was my favorite thing to order. Made some up a couple of years ago. Take a steamed crab, remove the top shell and clean out the center and lungs. Stuff the cavity with raw crabcake mixture. Dip the whole crab in a thick batter to cover everything, similar to pancake batter, and deep fry.
You can do the same thing with a raw softcrab, after you clean it stuff the center with crabcake mixture, fold the top shell back on, dip in batter and deep fry. Talk about rich!

They are tasty... "Fried Hard Crab" Back in my crabhouse days
we used to make them with half crabcake & half crab imperial
Also used a 50/50 mix of tempura batter and pancake batter.
They were a pain and always slowed down the kitchen, but
customers sure did like them. Charlie Brown's is a great name!

My Mama did that for years, I still do.
You don't even have to stuff them. I just clean them and half them then salt, pepper, flour and fry. good stuff.
I will sometimes crush the shell a little bit before frying(for the newbies).

Fried hard crab is still hard crab. Eat it like normal except you get all of that good, old fashioned greasy batter!

Why grill or steam something you can't eat? Duh.... It's all about the batter and a different taste the meat takes on...

i've had fried hard crab from many places, some cheap, some very expensive and 85% of them were not good
fried hard crabs are like sex
when it's bad - it's OK
when it's good - it's pretty good
but when they're great - it is freakin fabulous
it's all in the batter and it's like eating corn of the cob with a crab leg - got my favorite place and they are great
