They have our launch closed in my subdivision and I have been unable to put my traps out. Our property association got scammed on a new boat ramp. Somehow it fell apart in a week and the builder is avoiding there calls. So until the new contractor builds the new ramp I will have to hand line it. Went Saturday and got enough for a meal .

I went back out this afternoon.  My traps had no bait and only one throwback in each.  I hiked back to try by the fallen pier and stopped right before it to put a line in a small inlet.  There was a six in crab in the shallows that I scooped up and I thought this was going to be a good spot.  I put six lines out on the pier and pulled in at least 30 crabs, all undersized.  After 45 minutes I decided to move to the front pond.  I got all the lines off of the pier and when I went to pull the line from the inlet there was another keeper crab.

I tried on two different ponds for another hour with no keepers.  Plenty of undersized crabs, just no keepers.  I decided to run the traps in hopes of getting at least two more crabs so that I could have a least one meal.  Well, that is exactly what I got, one keeper in each trap.  Grilled crabs for lunch tomorrow!

I boil them in Zatarains Crawfish  Shrimp and Crab boil. It is salt based. Bring the water and spices to a boil and then add some small red potatoes and corn.  Boil that for about 8 minutes. Then  add the crawfish and let it come back to a full boil.  Boil for 5 minutes, turn off the flame and let sit for 20 minutes. If you want extra spicy add cayenne into the boil. If you can not get Zatarains or Louisana Brand boil make sure you have about a cup of salt per every 5 to 7 lbs of crawfish and what ever seasoning you use. Almost forgot I also pour a little vinegar into the mix. My Grandpa used to tell me that it got the spices into the meat.

How did that vinegar secret get over there to TX ?
And it also helps separate the meat from the shell --makes
it a little bit easier to peel.

It helps when you were born in New Orleans (been in Texas since 1964).  Have always used vinegar in the crabs too.  Our grandparents were born, raised and died in New Orleans.
