I asked my nephew works @ a local crabhouse what they do with cooked crabs @ the end of the night. He said any cooked crabbed are stored upside down,carapace side down.This is to allow any moisture to drain and collect in the shell and not the meat.It was something I had never thought of but made sense.
What do they do then? Do they re-heat and re-serve? Upright or upside down? Just curious.
