I have been working on a new crab cake recipe the past few weeks now and finally think I have something.

Ingredients:

1lb crab meat
1/4 cup minced onion
1/4 cup minced green bell pepper
1/4 cup minced sweet peppers
Dash of red pepper flakes and salt
1/2 teaspoon old bay
1/4 teaspoon garlic salt
2 tablespoons butter
2 egg yolks
Breadcrumbs(just for coating)

Directions:

Melt 2 tablespoons butter on med low heat.  Add minced onion, bell pepper, and sweet pepper.  Simmer covered for 5 mins.  Pour over crab meat and gently mix while adding the old bay, garlic salt, and a dash of red pepper flakes and salt.  Add 2 egg yolks and gently mix(they mix in very easily).  The mix will start to stick together very nicely.  Mold into cakes.  Coat with breadcrumbs and pan fry 3-4 mins on each side.  Squeeze lemon slices over them when done.

They taste like you're biting into pure well seasoned crab meat with no filler.
