Claw meat gets tacky in the fridge?
«
on:
September 07, 2005, 05:48:13 PM »
I cleaned out a mess of crabs last night, which had been steamed Sunday, then refrigerated. I left the claws for last, and was surprised to find that the meat was fairly sticky in the claws and pretty hard to get out. It stuck to the claw-shells.
Is this natural? I boxed it separately from the body meat (which seemed fine to me) just in case there's something wrong with it. Is this a function of steaming with Old Bay or something?
Or should I ditch the claw meat?

Actually, it was cooked Sunday night, which is three nights ago.
Is claw meat normally kind of tacky after refrigerated?

I think claw meat is tackey after being chilled. The internal meat seems to come out just as easy as when they're hot, but the claw meat can get stringy and sticky.

Actually, the Japanese would disagree with you.
Certain kinds of seaweed have powerful anti-toxins.

As long as it is properly refrigerated, the crab meat should be fine. There was another post earlier last week on this... how long can you keep it in the frig? I think the experts said up to about 4 days, and then put it in the freezer.
As far as eating seaweed, if you've ever eaten lean ground beef, you have eaten carageenen (sp?), which is seaweed. You lived didn't you? Dr. Larry?D says its good for you, and I think he is right.

No, I got it, but I thought politeness required that I disregard it!
After all, this is not a cannibalism forum -- I know, because I visit several for recipes and safe-handling instructions!
