Saw a video online where a guy made lobster and cheese balls. I wasn't about to spend $30 on a handful of lobster meat so I tried a pound of shrimp that was on sale $7.99 instead. Made them like crab cakes with the McCormick Old Bay crab cake mix, a squirt of yellow mustard, a heaping half cup of shredded cheese and I used two tablespoons of miracle whip since I despise Mayo. Rolled them into balls a little smaller than tennis balls and coated with bread crumbs. Then in the air fryer. Turned out pretty good

Here are two more Shrimp balls recipes!

Fried Shrimp Balls (Bolete's) from Mosquito Supper Club book
1 ¼ pound Shrimp         This recipe sounds great!
¾ cup green Bell Pepper
¼ cup Celery
2 TBS Parsley
2 TBS green Onion
1 TBS + 1 tsp hot sauce
1 tsp salt
1/8 tsp black Pepper
1/8 tsp Cayenne Pepper
Peanut oil for frying
Instructions
Dice all above ingredients then put in food processor on pulse until a smooth paste and no vegetables discernable.
Put 4" of oil in heavy pot for frying; oil to 375F with thermometer
Make small 2" ball first and fry for 6 minutes; drain on paper.
Taste and adjust seasonings until correct.
Now make rest of Shrimp balls and serve.

Cajun Shrimp Balls from Pirate's Pantry Cookbook altered
3 tablespoons butter, melted
3 tablespoons flour
2 tablespoons chopped parsley
2 bunches green onions, chopped
2-3 tablespoons minced red pepper
About 2 or so cups of cooked rice
Salt, pepper, onion & garlic powder to taste
Louisiana hot sauce or Tabasco, to taste
1 lb shrimp, cooked, rough chopped
I boil my shrimp in salt & crab boil.
5 eggs
2 sleeves saltine crackers, crumbled
Oil or shortening for deep frying
Stir in shrimp, rice, green onions, red pepper, flour, 2 eggs, melted butter, hot sauce and seasonings.
Shape into balls. Sometimes, I have to add a little more melted butter or flour depending on the consistency. Beat the remaining eggs. Sometimes I add a little milk to my eggs. Dip into beaten eggs then cracker crumbs. Let sit for about 5 minutes or so. They seem to get more firm that way.
Heat oil to 325 degrees. Fry 4-6 balls at a time until golden, 4 to 5 minutes.
