First question from the new guy.... Most of my pots will be set up in prob 6-8'. At times I may have an area to set pots deeper. Are there any drawbacks to having my ropes much longer than the 20% past depth. I have a load of 5/16 lead rope so that's what I will be using.

More rope is more rope to pull up, and more to get snagged on stuff. I'd still cut the rope something like 25% longer than you think you'll ever need, but wrap the extra around your float/buoy until it's the length you need for your depth that day. Leave extra in case of rising tide or boat wake action.

That's what most folks do.

Lead line will work fine and less likely to get picked up in a prop.
