Chester River Hunting Service Rocks!!!!!
hunted with Dennis Anthony and his crew this past saturday, and they put us on the geese.  Myself and my two friends had never shot geese before and we are all hooked now.  Too bad the season is coming to an end.
injected those gooses with some cajun butter and fried a couple up that night, delicious.  Man I am still thinking about that trip.  What a rush.

Cskiff,

Man good for you.  I wish I could get a day out of the asylum so I could go shoot something jut to feel better.  My brother deep fry his geese.  pretty good.  You can also take the whole goose and shove some cut apple, celery and onion inside the goose and then rub the outside with a orange cut in half and a lemon cut in half.
pepper and salt the outside and either cook on the grill over indirect heat coals on the side instead of the middle or place on a smoker.  cook until the leg joints juices run clear not PINK.  must be cooked.  You can also roast this way in the oven.  Think it is 300 degrees for 1-2 hours.  again until juices are clear.  I sometime par boil mine for 20 mintues with a beef bouilon cube in the pot.  keeps them moister.
Always remember to soak in a brine first either before cooking if fresh or thaw in fridge in salt brine.  It draws out a lot of the extra blood.  If you don't I think it is a bloody meat and tastes more like liver.  yuck.  if you soak em they taste more like roast beef.  Anyway goodjob.  Sat is the last day.  I am going [Sam Hill] or high wate.  Wok has cost me 4 sat of goose hunting this year.  Not this saturday.

Thanks guys,
I am hooked.  Ive got geese on the brain.  Crabdog thanks for the tips.  I was wondering about whether or not I should soak them in a brine.    I wish the season wasnt over tomorrow.  Id love to do it again.  Maybe I can get a snow goose trip in.  Anyone have any info on how the snow goose hunting has been lately.  Maybe some of this cold weahter will spark things up a bit.  Otherwise Ill have to wait till next year.  Crabdog, keep me in mind if you see any spots open up for a pit blind lease. ;)  Im very interested.

Will Do with the blind may have an opening next year.  waiting to see if everyone signs back up,  Always soak in brine before cooking.. Some like Canada goose straight up.. but snow goose which are not as good you gotta do it.  I just breast out the snow geese.  soak em and marinate them in olive oil, soy and garlic and montreal steak seasoning and grillem to about medium to medium well.. just a touch of pink.. It is ok to have pink on breast, but not a whole bird... with the carcass.  Wrap in bacon beofre grilling after marinating.  YUM  ANyway.. I am chomping at the bit to go shoot this weekend.  Can't believe deer and goose is over.  It seem like I was just rapping up crabbing in Oct and now it is almost February.  Good that the time has one fast, but it went so fast cause of work being busy and the holidays etc and they all cut into my time out there.  guess I'll get em next year.  I always end up going the first day to haul decoys down and stuck the last day hauling em back home..Wish every one a safe and good rest of the season
OK OK OK.. have a good next 2 days. :(
