 Thought I would post this. Many years ago, 70's, we would eat crabs here. Never any complaints, always good crabs.

  Schultz's Crab House in Essex was among five restaurants nationwide to receive an America's Classics award this year from the James Beard Foundation.

The award honors "restaurants that have timeless appeal and are cherished for quality food that reflects the character of their community," according to the James Beard Foundation.


Schultz's, located at 1732 Old Eastern Ave., opened as Schultz's Cafe in 1950, and became a crab house in 1969 when the McKinney family bought it. Owner Steven McKinney could not immediately be reached for comment Wednesday.

SHELLFISH

I just watched an episode on Food Paradise and they included Schultz's Crab House. It certainly looked good and their crab cakes look real good too! I could use a few of those right now!

Saw that too, man, that was a lot of seasoning on those steamed crabs. Everything looked delicious, especially the crab cakes.  It is a small place , drove by it last year and it was in the same spot in the same building.
I'm eating homemade crab soup once a week to have my crab fix.  LOL

Everything looked good but I was surprised when he said he steams his crabs for thirty minutes!
Granted that was a large pot he steams in but thirty minutes............?

Did you see the cover on the pot, a sheet of metal.  It didn't look heavy enough to keep the steam from escaping more. For that many crabs, 30 minutes on high heat should do it, IMHO.  You thinking the time was too little or needed more time?

anything less than a full bush 20 is fine but 1 to 1 1/2 bu 30 min here also.

Mine steam for almost an hour, and they come out perfect. I pre-clean, so I don't know if that has anything to do with the extended time or not.

I only usually cook a dozen at a time. I usually wait until I have full steam then put in the crabs. 15 minutes and they are done. Yesterday I caught 20 crabs and put them in my 16 quart steamer pot; it was full! Full steam and crabs are in ....20 minutes later they were all fine! I even sprinkled on JO#2!
I ate four last night for dinner and six for lunch today.  So good! It's been a while since I've had a good big crab!
Of the 20 I caught only two were light and the rest full. We had a full moon two days ago.

I guess they cook faster in the Florida heat.
