Cooking Crawdads

I recently tried my second attempt at cooking crawdads. I bought a package of precooked and spiced frozen crawdads at a local Publix market. I only steamed them. They were OK at best. Recently I was in a local seafood purveyer who had live jumbo crawdads in his case for $5.99 a pound. I bought three pounds. I knew I had a package of Zatarains "Crawfish, Shrimp & Crab Boil in a bag" at home so I gave it a try. Along with the bag I also added about an ounce of Zatarains liquid cocentrate.The directions call for about 2 and 1/2 quarts of water but it did not cover the shellfish so I addeed about another quart of water. Total about  a gallon of water now. I also squeezed in the juice of one lemon and about a tablespoon or two of salt. When done I was not impressed. Not enough flavor and the water was brown not red!
I then realized I should have used some of the powder form Zatarains Crawfish, Shrimp & Crab Boil Complete Nothing More To Add or Louisiana Crafish Shrimp & Crab Boil Nothing to Mix Just Pour & Boil. The next time I see Crawfish for sale I will try this method for a fuller flavor!
Watching some You Tube videos one fella suggested using the powder form of Zatarains and Louisiana combined for a fuller flavor!

Crayfish
3-5 pounds Crawfish
1 4 oz packet Zatarans Crab Boil   or   will do 4 pounds of crawfish
1 5 oz packet Louisiana Crab Boil      will do 4 pounds of crawfish
Or use both for more flavor!
1 oz Zatarans liquid Crab Boil
1 packet Zatarans Crab packet bouquet
Boil 3-4 pounds of crawfish in 2.5 – 3.5 quarts water (to cover) 2-5 minutes then let hot soak 15 minutes while water cools (add ice)
Can add red potatoes, corn, mushrooms. Extra Virgin Olive  Oil,
Sausage, Onion, Garlic, Bay Leaf, Celery, Bell Pepper or whatever you prefer!.

I dont use the boil in bag. I usually do three lbs of crawfish just for myself and use 3 qts. water a tspn of liquid crab boil and six ounces of the powdered Zattarains crab boil. Roughly the same additions you use for seasoning. After crawfish have been soaked three times submerged in water and water runs clear, I dump them in boiling pot and time for fifteen minutes and than shut off fire and let soak for another fifteen minutes.
Dont ever boil crawfish without adding smoked beef sausage cut up in one inch pieces and also whole Mushrooms.

If you want to be a crawfish grand master you have to cool your pots liquid down to 150 degrees after turning off fire, and than soaking.
And if you want to be a Super grand master, boil your crawfish in separate pot from soaking pot. They dont call them mudbugs for nothing.

use a least 7-8 oz powder crab boil for 4 or 5 pounds crawdads . i boil mine 3 minute and soak 25 minutes
