I've had this with a newly molted crab.  The shell was probably not completely solid.
I would not rule out being a bad one with crabs ya never know.
Not much help but It certainly not overcooked.

Look at me I never knew there was any other species of crab aside from the beloved Blues til this year.

Overcooking can cause mushy meat.

Did the meat smell of ammonia?

No, absolutely no ammonia smell, or else I would have been alarmed!

Thanks, Tweetie, for your thoughts also!  That seems to make sense!

Sorry I ment to quote you, but I must have clicked on modify.  Sorry, Sorry, wont happen again Undecided

What I wanted to ask was how long was it from "the other night" to "yesterday" and how were the crabs handled after steaming. Like did they sit out for hours before going in the ice box?

Again Janice, sorry I clipped your topic.  I will be using that preview button more now..

Jack...you are forgiven lol.  I am just curious as to why you were actually able to edit my post!  I'm going to try editing another person's post, but I won't actually do it...I'll preview first...this has got to be a glitch on this board!

Anyways...we bought the crabs on Friday night...at 5:00 for just $27.50 for a half a bushel!  We brought them right home and all of them were steamed within an hour.  It was the very next day that we noticed the creaminess, but actually didn't notice any on Friday night.  So I was just curious about it...and nobody got sick!

Its was not a problem with the board.  It was a problem with Jack.  The reason that I can modify folks comments is basically to remove words or statements that you and others find offensive.
