 We clean them then steam them with some J.O spice.
When that Spice steams into the meat there's nothing better.

IMO, it's a shame to take a wonderful sweet Maryland crab and clean it before cooking. The spice, whatever kind you prefer, is to compliment the meat, not overpower it, cleaning first allows too much spice on the meat.

Maybe I need to get off the Shore more but I have never heard of steaming them after you clean them. I am assuming you are talking about removing the shell and innerds and not just hosing them down  Roll Eyes

I cook mine live. I use a big pasta pot, it has a big strainer insert. I can layer all the crabs in there with tongs right in the sink, put the lid right on it and lower it into the water, the strainer insert sits about 2 inches above the bottom so I only start with 2 inches of water and crabs steam rather than boil.

IMHO cooking them live originates from tradition ( and the waters were a lot "cleaner").   Nowadays, considering all the [curd] in the water, and the raw sewage spills, especially in the North East like the NYC area for example, it's a lot safer (healthwise) to clean before cooking.  Thats just my opinion and I'm sticking to it....Smiley

I've always steamed them live.  I'm a bit surprised that some people clean them prior to cooking them; kinda like the first time I watched a chef/cooking program and they were preparing lobster and cleaned it before they cooked the meat. 

I do wonder how much it changes the taste though.

I have always said to each there own. But with that said I just don't under stand why someone would remove all the goodness from a crab through it away and steam a naked carcass it's just plane and simple WRONG so i say  stop stop and get some  help wall

I Think a whole lot depends on where the crabs are going. For instance  if going to a gathering, I usually bring them steamed and intact.(just for the sheer impressiveness of the size) . When prepairing them for my own consumption, at home, I would rather clean them for health reasons.    Makes for easier picking IMHO.
