My wife and I were making our first batch of crab cakes last night, and had to estimate the weight of crab meat that we had. By comparing the weight to known containers with known weights, we estimated that we had about 1 pound of crab meat. This meat came from 1/2 dozen crabs that averaged 6-inches. If my math is right, I can assume, for future recipes, that we are going to get about 2-1/2 to 3 ounces per average crab. Does that sound right?

fully packed crabs should yeild 8-10% average pick out weight, so expect 3.2 to 4lbs of meat out of a bushel. Saying that is the average as you might get less if there is water hard crabs making up weight for bushel. 10% is top.

You must have been using all the meat you picked, and even that would be alot from 6-6" crabs. I'm sure you don't get a pound of lump and jumbo lump from 6 crabs.

I did pick them clean. That said, it was only a guess. My not so scientific method of measuring was to hold a 16 oz jar of jam in one hand and the glass dish containing the crab in the other to compare the two. I am too cheap to buy a scale that measures ounces (gave that stuff up a long, long time ago) and was hoping I could find a rule-of-thumb to use on a "per crab" basis.  It sounds like I should use 2oz per crab for barely legal (5" in RI), and adjust up if I am bringing in lots of large Jimmies.

Agreed.

I just picked 7 clean yesterday, and ended up with what appears to be at least 1 LB. If I weren't so [dang] cheap, I would buy a kitchen scale and figure this out once and for all.

i got lots of crabs....some imperial sauce and a postage scale....who wants to know what....im eatin and pickin tonight...ill let you know how much meat is in a 6" hard crab....and a 7" papershell...Wink
