I've noticed that the body cavity of some crabs are just packed with mustard and other organs (whitish, intestine looking) while others have much less mustard and virtually none of the whitish stuff.  Any idea why this is?

It depends on how heavy the crab is. The closer to when they sluff the more mustard they have. The heavy crabs always have good yellow mustard.
