My question is about to freeze crabs during the summer to sell crabs during the winter season.
Crabs would be cooked (steamed crab) and frozen whole in a Nitrogen tunnel (flash freezing).
How would be the quality of finished product for taste and consistency ?

I would only consider buying the frozen Dungeness, or the snow, or King crab.
Blue crab is too delicate for freezing. It loses too much.
The money is in processed crab in a can. I believe that even people who have eaten crabcakes made with fresh crab meat, can accept the processed crab meat as a substitute. I , for one, cannot. I look at them as they marvel at how good it is, and I think they are delusional.
However, the imported Asian crabmeat is picked from a different species of crab. I understand that Brasil catchs the same species as ours, so the difference would only be in the processing.

I tried freezing whole cooked crabs once and I will never do it again. The texture of the meat was not good. If I can't eat them right away I will pick the meat and then freeze that for crab cakes or soups. Good luck if you try it.

Has anyone tried raising crawfish in ponds in Brazil?
Years ago, in Florida supermarkets, I could find small one pound boxes of frozen
langostim. I haven't seen it sold here for years.

Thanks for answers and information about FROZEN STEAMED CRAB.
About Crawfish topic, there are only some initial experiments from brazilian universities to raise crawfish in ponds in the Northeast of Brazil.

we boil em clean em and half em then freeze em and use in gumbos and stews.
never freezed em uncooked and not cleaned.
