Capt Williecrab took this guy on a crab adventure along with his friend a couple weeks ago.  Chefmark is a professional chef,  he has invented a crab dipping sauce and gave some to the Capt.  The Capt has never used dipping sauce with crab meat before.  Now the Capt is addicted to this sauce.  The dipping sauce is so good,  the Capt eats it with a spoon when he runs out of crab meat to dip it in.  There is no turning back now.  Chefmark trained in cooking crabs in Louisiana.  When in his presence, a person is not allowed to say the words  O*d B*y.  He has his own stuff also, and it is excellent.   (the Capt did add a pile of face burning hot peppers from his garden for this batch)  This crab sauce is out of this world! The Capt was watching the Eagles crush the Steelers and consumed to much crab meat with this sauce, he was unable to get out of his chair for several minutes and almost needed help from his grandcrab crew.  This stuff is so goooood,  so beware!

He sells this crabcaine,  he wont give up that recipe, not even to close realatives,  there I was in my 50'th year crab eating the way I love to,  then I tried this sauce,  now if I try to eat without dipping in this highly addictive delight,   I have trouble

I just sent ''chefmark'' a PM, asking him to post a link stating where we can buy this mysterious dipping sauce! Guess we'll just have to wait and see what happens. Shocked Shocked Shocked Shocked Huh Huh Huh Huh Huh Smiley Smiley Smiley

Since he was trained to cook crabs in Louisiana I wonder if it is a Remoulade (reh-moo-lahd) sauce?

This is not a remoulade sauce, but it s an original recipe of mine. Dipping sauce and crab seasoning are originals and travel with me up and down the east coast . I have clients for my catering, some as long as 26 years. I personally blend all of our seasonings in small  batches for beef, chicken, sausage, and of course seafood.

Chefmark,
thank you so much.  Most of the easterners thought I was crazy when I BOILED my crabs until they tasted them.  Hate to say it and some will not admit it but I have converted some steamers into boiling their crabs.

Even last month at the party people who have never eaten large mouth bass because "they don't taste good" are not converted to Louisiana style cooking and seasoning. 

Next year we have to cook for these guys and gals at the WYE party. Wink

Yes I am surprised,  I have used a crab meat dip before,  I just put 3 quarts of this stuff in my freezer,  also keep in mind,  I boil my crabs today as well as sometimes steam them.  Also I had some of your stuff at the Wye,  and it was all that!  Yes I should have known.  But just in case,  I should probably come down there to your kitchen and have some of that again, you know, just to make sure.

well,  I love jumping in the creeks and walking them at lower tides,   but you got gaters in them creeks where you are,  you might have to tie me in the boat just in case I forget...... so how bout you come up here and go crabbing with me?

I cook them very much like Capt Ron,  but at the Wye,  he showed me and let me taste those big onions in the mix,   oh man!
