I love making a batch of clams casino every month or so..but.. last month I made some crab stuffing and froze it with the intention of stuffing some flounder. I brought home 6 small clams yesterday and was going to go thru all the steps to make casino, then I remembered the stuffing.. I halved the clams, put about a small tablespoon of the frozen stuffing on each and a nickel sized piece of raw bacon on top (a drop each of Tabasco and lemon for good measure) put them on a hot grill for about 5 to 8 minutes and they were awesome! Took only 5 minutes to prep! I had to wait on the grill.. kept the juice in the clams and this kept things moist. Only part I need to work on is the bacon not getting crisp.. not a problem for me, but it is for some people so maybe half cooking the bacon would be advised.. sorry for the long rant, but these were good!
