 Never steamed cleaned crabs without the shell ,do you have to adjust your steaming time when doing them this way Huh??

I just posted this in my Wye River crab report.

Absolutely delicious. Cooking times are a little different without top shells. Been cooking them for 26 years the same way, and my grandfather for 40 years before that. They come out perfect every time.
I cook them in batches of 35-40 and cook times are as below:

Put in pot:
2" high rack in bottom of pot
1 Cup water
1 1/2 cups cider vinegar
1 12 oz. beer (not light beer)
1/2 stick butter
Considerable amount of Old Bay on each layer of crabs in pot

Put lid on pot, turn burner on high for 15 minutes, until heavy steam starts in pot.
Turn flame down to 3/4 heat, and steam for 45 minutes.
Turn off flame, leave pot on burner and cock lid open about 2". Leave like that for 10 minutes.

I then put them in vegetable crispers and let them cool a little on countertop before putting them in fridge. If you put them in fridge too soon, they create a lot of moisture in the unit from heat of the crabs and coolness of the fridge.

Mr. Seanile, I used to kill them first, like you did in your video, by putting an ice pick through the point on the bottom side of the crab. But I found this to be a waste of time, and often times, the ice pick would hit the tendon that holds on the claws and they would fall off. So now I just rip the back shell off while they are alive. I pull the crab out of the basket with tongs, grab and hold the crab by the backfin with one hand, and pull the shell off by the point with the other hand. The crab cock on the bottom can be taken off after that, then the face, lungs, and guts in that order. Hose out crab to remove any guts that may have been missed with the knife. It takes a while to clean a bushel of crabs, so cutting out unnecessary steps to speed it up is well worth it. I have only been bitten twice in all the years I've been cleaning them this way. Technichally, it's not getting "bitten" but rather "pinched", but you get the point. But the amount of hours I have saved by not pre-stabbing them is quite substantial, and helps an already long day not be any longer than it has to.

An ice pick is the preferred killing method of the mafia, not crabbers.  I put live crabs in an ice bath first, before removing the shell.  It's more humane and it's easier.    Grin

I saw he had a hole in the bottom of each crab, so I am assuming he is using the ice pick/screwdriver method of putting them out of there misery. I don't even bother with ice bath. Right out of cooler, right on to the cleaning table.

They go from the bushel into a cooler filled with ice and water which puts them into hibernation.  Then I clean and cook them.

Ice water bath is definitely the bes/quick way to go.  Put the cleaned crab in another small cooler with some ice if you are cleaning a bushel.  Can be done fairly quickly, also use your waterman gloves.  I also do this at the dock or back deck with a garden hose handy.  Drop the shells and face into a 5 gallon bucket and then go dump that in the woods away from the house.

I don't ice bath or stab. Just rip it off. Must be careful of course, but feisty crabs is the fun part.
