Yes I know you catch them, but say you have a craving and are too lazy to catch them, how do you pick them at the store?  Do you look for dirty ones or clean ones?  Males or females?

If you are able to pick them out yourself do the pinch test. You pinch the edge of the shell. If it flexes at all its light. Also look for rusty bottoms.

Thanks! I heard about the rusty bottom, just didn't know the pinch test!

You pinch the corner of the shell. Right next to the legs. If it feels rock hard it's a heavy crab. If it has any give then it is light.

Does the pinch test work on crabs that have already been steamed, or just live ones?

Outside of a restaurant, I would never buy already cooked crabs. You have no idea if those crabs were dead or alive when steamed. And I'm sure a lot of places steam their dead ones to prevent monetary loss, especially as prices continue to rise.

Very odd question. Frozen is frozen. All males. Shopping places are by law not allowed to sell females. Only restaurants can do that.
