Fried Soft-Shell Crabs
Soft-shell crabs are becoming very popular around the world and are
considered a delicacy. Because the shell is completely soft (and edible), the entire crab
can be eaten, although you'll need to dress (clean) them properly first. Soft-shells are
best when fresh, although they can be purchased fully dressed and frozen during the
off-season. The simplest method of cooking a soft-shell crab is to bread and fry it.

Place dressed soft-shell crabs in a
seasoned flour mixture (you can season it with salt, pepper, Old Bay seasoning, or you can
purchase a box of mix from your local seafood shop) to bread. Coat well with the flour
mixture. |
Place breaded crabs in a frying pan and fry in oil heated
to 375-degrees F. Be careful since the crabs may pop and spatter the oil while cooking. |

Cook crabs on each side, turning once, until golden brown (about 4 minutes
on each side). |
Drain on paper towels. Crabs may be eaten on hamburger
buns (soft-shell crab sandwiches) with ketchup or tartar sauce or they can be eaten
as-is. |
